However, alongside technological advancements,, Quinta do Vallado still uses the traditional foot-treading method in granite lagares for some wines.
Also in 2009, the construction of a new underground cellar was completed, with the capacity for 1,000 casks, where the best wines age in ideal temperature and humidity conditions.
Tawny Ports are aged for many years in large wooden casks (tonéis) that have been passed down from one generation to the next.
